Celebrating Saint Lucia
What a wonderful learning experience and day of memories. It started with my daughter and I getting up at the crack of dawn and reading Scripture together and then we proceeded to make a delicious treat. Our recipe for this year was found in the book. Celebrating the Christian Year by Martha Zimmerman. (This book has lots of great ideas for incorporating meaningful traditions into your holiday celebrations.)
They tasted as wonderful as they look!
My daughter has been looking forward to this day where she could serve her family breakfast in bed. She was so excited this morning to surprise them all with her delicious Banana Pecan Muffins and Special Mocha. In each room we left a tray with a small candle, a plate of muffins, and a cup of mocha. I followed her around with a lantern this year since we did not have a battery operated crown of candles and I did not feel comfortable with real candles on her head.
Banana Pecan Muffins
2 cups mashed bananas
1/4 cup melted butter
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 cup raw sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2-2/3 cup chopped pecans

Grease 12 muffin tins. Combine bananas, butter, egg and vanilla together. In another bowl, combine remaining ingredients. Make a well in the center of the dry ingredients and pour the liquid ingredients over them Stir quickly until they are just blended (batter will be lumpy). Fill the tins 2/3 full. Bake 20 min at 350º
When the children finished their muffin(s), we gathered in the living room and I read them the Story of St Lucia.
